It&#8217;s a dish that is enjoyed not only in the Principality, but also more widely in south-east France, as <em>pissaladi\u00e8re<\/em> is an integral part of Nice&#8217;s culinary heritage.<\/p>\n\n<p class=\"related\"><a href=\"https:\/\/www.monaco-tribune.com\/en\/2021\/12\/julien-bravetti-the-new-face-of-chez-roger\/\">Julien Bravetti, the new face of &#8220;Chez Roger&#8221; <\/a><\/p>\n\n<p>Here&#8217;s the recipe our reader sent in.<\/p>\n\n<p><strong>Makes two <em>pissaladi\u00e8res<\/em>:\u00a0<\/strong><\/p>\n\n<p><em>Ingredients for the dough:<\/em><\/p>\n\n<ul class=\"wp-block-list\">\n<li>500 g type 55 flour<\/li>\n\n\n\n<li>30 cl lukewarm water<\/li>\n\n\n\n<li>2 sachets dried baker&#8217;s yeast<\/li>\n\n\n\n<li>2 level teaspoons fine salt<\/li>\n\n\n\n<li>3 tablespoons olive oil<\/li>\n\n\n\n<li>2 tablespoons milk<\/li>\n<\/ul>\n\n<p><em>Recipe for the dough:<\/em><\/p>\n\n<ol class=\"wp-block-list\">\n<li>Mix the ingredients together<\/li>\n\n\n\n<li>Knead, form a ball and leave to rise for 2 hours<\/li>\n\n\n\n<li>Degas the dough<\/li>\n\n\n\n<li>Divide in half and roll out<\/li>\n\n\n\n<li>Place in a pie tin and leave to rise for 20 min<\/li>\n<\/ol>\n\n<p><em>Ingredients for the filling:<\/em><\/p>\n\n<ul class=\"wp-block-list\">\n<li>4 large yellow onions<\/li>\n\n\n\n<li>Salt<\/li>\n\n\n\n<li>Pepper<\/li>\n\n\n\n<li>Olive oil<\/li>\n\n\n\n<li>One sugar cube<\/li>\n\n\n\n<li>Tomato coulis<\/li>\n\n\n\n<li>Oregano<\/li>\n<\/ul>\n\n<p><em>Recipe for the\u00a0<\/em><i>filling:<\/i><\/p>\n\n<ol class=\"wp-block-list\">\n<li>Brown the chopped onions in the olive oil<\/li>\n\n\n\n<li>Season with salt and pepper to taste<\/li>\n\n\n\n<li>Add the tomato coulis and sugar<\/li>\n\n\n\n<li>Simmer over a low heat<\/li>\n<\/ol>\n\n<p><em>Ingredients for the garnish:\u00a0<\/em><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Black Nice olives<\/li>\n\n\n\n<li>Garlic cloves<\/li>\n\n\n\n<li>Anchovy fillets<\/li>\n\n\n\n<li>A little oregano<\/li>\n<\/ul>\n\n<p>Cook for 30 mins at 200\u00b0C.
