This was an opportunity for SBM&#8217;s Chairman and CEO to outline the Group&#8217;s major projects.<\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\" id=\"h-1-le-nouveau-blue-bay\">1. The new Blue Bay<\/h2>\n\n<p class=\"wp-block-paragraph\">One of the major projects will be launched next month. By mid-February, the famous Blue Bay restaurant will have had a makeover and welcome customers to a brand new space. The Blue Bay is two-starred Michelin chef Marcel Ravin&#8217;s restaurant. <em>&#8220;It will be the showcase that his talent deserves<\/em>,&#8221; said St\u00e9phane Valeri. &#8220;<em>We&#8217;re lucky to have some great international chefs in Monaco, but Marcel Ravin truly built his career at SBM and that&#8217;s a real source of pride!&#8221;<\/em><\/p>\n\n<p class=\"related wp-block-paragraph\"><a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/10\/princess-caroline-attends-surreal-dinner-by-chef-marcel-ravin\/\">Princess Caroline attends surreal dinner by Chef Marcel Ravin<\/a><\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\" id=\"h-2-le-tres-attendu-amazonico\">2. The highly anticipated Amaz\u00f3nico<\/h2>\n\n<p class=\"wp-block-paragraph\">Its opening had to be postponed due to <a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/03\/cafe-de-paris-to-reopen-a-little-later-than-planned\/\">some setbacks<\/a>, but the Amaz\u00f3nico restaurant, which <a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/02\/a-sneak-preview-of-3-new-societe-des-bains-de-mer-establishments\/\">will serve Peruvian and Brazilian cuisine<\/a>, will finally open on 4 April 2024. Situated on the roof of <a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/11\/legendary-cafe-de-paris-opens-again-at-last\/\">the new Caf\u00e9 de Paris,<\/a> it will offer &#8220;<em>an even better view<\/em> <em>than the brasserie<\/em>&#8220;, in the words of St\u00e9phane Valeri.<\/p>\n\n<p class=\"wp-block-paragraph\">&#8220;<em>The concept is a hit in Madrid, London and Dubai<\/em>,&#8221; said the Chairman and CEO. &#8220;<em>Amaz\u00f3nico will bolster the entertainment aspect of SBM&#8217;s establishments.&#8221;<\/em><\/p>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"579\" src=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2023\/09\/amazonico-monaco-1024x579.jpeg\" alt=\"amazonico-monaco\" class=\"wp-image-194219\" srcset=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2023\/09\/amazonico-monaco-1024x579.jpeg 1024w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2023\/09\/amazonico-monaco-531x300.jpeg 531w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2023\/09\/amazonico-monaco.jpeg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\"><em>Amaz\u00f3nico<\/em> \u00a9 Monte-Carlo SBM<\/figcaption><\/figure>\n<\/div>\n<p class=\"wp-block-paragraph\">St\u00e9phane Valeri also reminded attendees that seven new shops are due to open in the Caf\u00e9 de Paris. The first ones should be ready for opening in April and the others in the autumn. <\/p>\n\n<p class=\"related wp-block-paragraph\"><a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/11\/historic-moment-as-prince-albert-ii-and-princess-charlene-inaugurate-new-cafe-de-paris\/\">Historic moment as Prince Albert II and Princess Charlene inaugurate new Caf\u00e9 de Paris<\/a><\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\" id=\"h-3-l-arrivee-d-une-cuisine-japonaise\">3. The arrival of Japanese cuisine<\/h2>\n\n<p class=\"wp-block-paragraph\">Another event to keep an eye out for will take place in July 2024, when a new concept will be unveiled in collaboration with three-star Michelin chef Yannick Alleno. From this summer, the Crystal Bar will offer Japanese food. It&#8217;s a cuisine that Yannick Alleno is already familiar with, having opened his sushi counter L&#8217;Abysse at the Pavyllon Ledoyen. The new Moods<\/h2>\n\n<p class=\"wp-block-paragraph\">The reopening is eagerly awaited by regulars. Moods, or rather the new Moods, will open on 17 October. <\/p>\n\n<p class=\"wp-block-paragraph\">Housed in the old premises, the new Moods will combine live music and laughter, thanks to a comedy club. While most of the performances will be in French, St\u00e9phane Valeri has not ruled out the possibility of programming shows in English. &#8220;<em>The new Moods will enable the party to carry on into the off-season<\/em>,&#8221; he added.<\/p>\n\n<p class=\"wp-block-paragraph\">Chef Marcel Ravin will be in charge of the catering side, creating <em>finger food<\/em>, ideal for a quick bite.<\/p>\n\n<h2 class=\"wp-block-heading has-text-align-center\" id=\"h-5-un-musee-dans-les-caves-de-l-hotel-de-paris\">5. A museum in the H\u00f4tel de Paris cellars<\/h2>\n\n<p class=\"wp-block-paragraph\">Last but not least, the <a href=\"http:\/\/VIDEO. Discover the wine cellars at the H&#xF4;tel de Paris Monte-Carlo\">huge H\u00f4tel de Paris cellars<\/a> (actually located between the H\u00f4tel de Paris and the H\u00f4tel Hermitage) are to be renovated, along with their restaurant. A museum will even be created, &#8220;<em>to showcase this exceptional heritage<\/em>,&#8221; said St\u00e9phane Valeri.<\/p>\n\n<p class=\"wp-block-paragraph\">The renovation is part of a series of celebrations that will be launched in April. 150 years ago in 1874, <a href=\"https:\/\/www.monaco-tribune.com\/en\/2022\/03\/marie-blanc-the-woman-behind-some-of-monacos-finest-establishments\/\">Marie Blanc<\/a>, the then widow of Fran\u00e7ois Blanc, succeeded her husband at the head of SBM and ordered the creation of the large cellars at the H\u00f4tel de Paris.
