Unfortunately, there was no repeat of last year&#8217;s stability, as three Var establishments were downgraded.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-deux-nouvelles-etoiles-a-monaco\">Two new stars for Monaco<\/h2>\n\n<p>Just nine months after opening, <a href=\"https:\/\/www.monaco-tribune.com\/en\/2024\/03\/les-ambassadeurs-by-christophe-cussac-already-two-michelin-stars\/\"><b>Les Ambassadeurs by Christophe Cussac at the H\u00f4tel M\u00e9tropole<\/b><\/a> was awarded two stars. These are in addition to the nine held collectively by six establishments in the Principality. Chef Christophe Cussac <i>&#8220;brilliantly navigates between a pure-bred Gallic culinary line-up and more modern recipes, all of which with the Mediterranean as baseline,&#8221;<\/i>\u00a0 reports the critic. There is a special mention for the restaurant&#8217;s <em>&#8220;incredible bread and dessert trolleys&#8221;<\/em>. In fact, the restaurant also won the Passion Dessert award thanks to pastry chef Patrick Mesiano.<\/p>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"664\" src=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/ambassadeurs-by-christophe-cussac-1024x664.jpeg\" alt=\"Ambassadeurs-by-Christophe-Cussac\" class=\"wp-image-223316\" srcset=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/ambassadeurs-by-christophe-cussac-1024x664.jpeg 1024w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/ambassadeurs-by-christophe-cussac-463x300.jpeg 463w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/ambassadeurs-by-christophe-cussac.jpeg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\">\u00a9 Les Ambassadeurs By Christophe Cussac<\/figcaption><\/figure>\n<\/div>\n<p>This year, none of the Monegasque restaurants&#8217; stars lost their shine. <a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/12\/alain-ducasses-louis-xv-voted-second-best-restaurant-in-the-world\/\"><b>The Louis XV Alain Ducasse<\/b><\/a> keeps its three stars, while <a href=\"https:\/\/www.monaco-tribune.com\/en\/2024\/02\/blue-bay-marcel-ravin-joins-grandes-tables-du-monde-club\/\"><b>the Blue Bay<\/b><\/a>, now with <b>Marcel Ravin<\/b>&#8216;s name attached, holds on to its two stars following its refurbishment. Yannick All\u00e9no&#8217;s restaurant at the H\u00f4tel Hermitage, <a href=\"https:\/\/www.monaco-tribune.com\/en\/2022\/04\/taste-test-pavyllon-yannick-allenos-new-monaco-restaurant\/\"><b>Pavyllon Monte-Carlo<\/b><\/a>, and <b>Le Grill<\/b> at the H\u00f4tel de Paris also retain their respective stars. Finally, two other restaurants each keep their star: <b>Rampoldi, Table d&#8217;Antonio Salvatore <\/b>and <b>Yoshi<\/b>, the only Japanese starred restaurant on the C\u00f4te d&#8217;Azur.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-cinq-nouveaux-etablissements-recompenses-sur-la-cote-d-azur\">Five new award-winning establishments on the French Riviera<\/h2>\n\n<p>While only one C\u00f4te d&#8217;Azur restaurant, <a href=\"https:\/\/www.monaco-tribune.com\/en\/2023\/08\/justin-schmitt-wins-first-michelin-star-in-eze\/\"><b>Ch\u00e2teau Eza<\/b><\/a>, was awarded a first star last year,\u00a0 there are five new additions to the 2024 Michelin Guide list.<\/p>\n\n<p>Closer to Marseille than Monaco, Fabien Ferr\u00e9, at <b>La Table du Castellet<\/b>, became the youngest three-star chef, at the age of 35. According to the critic, <i>&#8220;Fabien Ferr\u00e9 is working his magic. He has an artist&#8217;s sensitivity to Mediterranean produce.&#8221;<\/i> Pastry chef Fran\u00e7ois Luciano was also honoured, with the Passion Dessert prize.<\/p>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"773\" src=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/tablecastellet_cdutrey-1024x773.jpeg\" alt=\"\" class=\"wp-image-223320\" srcset=\"https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/tablecastellet_cdutrey-1024x773.jpeg 1024w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/tablecastellet_cdutrey-397x300.jpeg 397w, https:\/\/www.monaco-tribune.com\/wp-content\/uploads\/2024\/03\/tablecastellet_cdutrey.jpeg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\">\u00a9 Table du Castellet<\/figcaption><\/figure>\n<\/div>\n<p>Heading over to Saint-Tropez, <b>La Terrasse &#8211; Cheval Blanc <\/b>was awarded its first star. Alongside the Cheval Blanc hotel&#8217;s three-starred La Vague d&#8217;Or, this establishment is <i>&#8220;The quintessence of French art de vivre&#8221;<\/i> according to the Guide.<\/p>\n\n<p>On the border between the Alpes-Maritimes and the Var, the <b>Bessem<\/b> in Mandelieu was also awarded its first star. Chef Bessem Ben Abdallah <i>&#8220;brings a deft touch to a delicate Mediterranean brand of cuisine,&#8221; <\/i>says the critic.<\/p>\n\n<p>Last but not least, in Nice, not one but two establishments were awarded Michelin stars.\u00a0<b>Racines<\/b>, by Bruno Cirino and Jos\u00e9 Vidal, offers a unique vegetarian menu made up of organic fruit and vegetables. The guide applauds &#8220;<i>kitchen garden cuisine using ingredients that are picked only when perfectly ripe. Their talented craftsmanship shines the spotlight on characteristic Mediterranean produce, like garlic, olive oil and basil.&#8221;<\/i> Lorenzo Ragni and Florencia Montes, the Franco-Argentine couple at the helm of <b>Onice<\/b> , <i>&#8220;now cook together to create sharp, punchy dishes that reflect the seasons and the local catch; they also strike out with the occasional bold \u2013 and most welcome \u2013 flavour combinations<\/i>,&#8221; according to the Michelin Guide.<\/p>\n\n<p>If you have a sweet tooth, two other pastry chefs from the region were awarded the Passion Dessert prize: Julia Canavate, head pastry chef at <a href=\"https:\/\/www.monaco-tribune.com\/en\/2021\/10\/the-maybourne-riviera-two-new-restaurants-for-the-ultra-luxury-hotel\/\">Ceto<\/a> in Roquebrune-Cap-Martin, and Pierre-Jean Quinonero at Le Cap in Saint-Jean-Cap-Ferrat.<\/p>\n\n<p>Unfortunately, the 2024 edition  downgraded 31 establishments, three of which are in the Var: Les Oliviers in Bandol, Ren\u00e9&#8217; Sens in La Cadi\u00e8re-d&#8217;Azur and L&#8217;hostellerie de l&#8217;Abbaye in La Celle.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The emblematic culinary guide&#8217;s star presentation ceremony recognised several of the region&#8217;s chefs.
