Il periodo delle feste \u00e8 un momento cruciale per il personale. Lo chef Alex, che gestisce la pasticceria insieme a Nikolai Zhur, \u00e8 gi\u00e0 in piedi dalle 4 del mattino. Ci accoglie nel piccolo ufficio allestito tra le cucine e l&#8217;area di vendita, in mezzo alle confezioni natalizie.<\/p>\n\n<p>Nato a Mosca, Alexander Seleznev ha studiato pasticceria in Russia. All&#8217;et\u00e0 di 10 anni aveva gi\u00e0 capito che avrebbe fatto di questa passione un mestiere. &#8220;Da bambino amavo preparare e cuocere la pasta, fare la pasta frolla, i cioccolatini e i pasticcini&#8230; Ma in Russia non c&#8217;\u00e8 molta scelta, cos\u00ec mi sono subito interessato ai dolci di tutto il mondo&#8221;.<\/p>\n\n<p>A 17 anni, quindi, il giovane Alexander si \u00e8 iscritto in una scuola specializzata nel settore alberghiero e nella ristorazione a Mosca, per poi passare all&#8217;H\u00f4tel M\u00e9tropole della stessa citt\u00e0 per la sua prima esperienza professionale. &#8220;Ho avuto modo di confrontarmi con chef di tutto il mondo che mi hanno trasmesso la loro esperienza nelle specialit\u00e0 dei loro Paesi&#8221;, ricorda. Tiramis\u00f9 italiano, \u00e9clair francese, cheesecake americana&#8230; per lo chef Alex tutte le ciambelle riescono col buco!<\/p>\n\n<p class=\"related\"><a href=\"https:\/\/www.monaco-tribune.com\/it\/2023\/10\/qual-e-il-miglior-ristorante-italiano-di-monaco-una-top-10-con-le-vostre-risposte\/\">Qual \u00e8 il miglior ristorante italiano di Monaco? Una top 10 con le vostre risposte<\/a><\/p>\n\n<p>Per fare carriera, Alexander sapeva di dover dare il massimo e partecipare alle competizioni culinarie. Nel 2000 ha vinto il titolo di &#8220;Miglior pasticcere di Mosca&#8221; e, ciliegina sulla torta, quello di &#8220;Miglior pasticcere della Russia&#8221; nel 2001, oltre a numerosi altri riconoscimenti.<\/p>\n\n<p>Il pasticcere, allora trentenne, apre il suo primo locale a Mosca con il collega Nikolai, partecipa a un programma di cucina trasmesso in Russia e inizia a scrivere libri. &#8220;Avevo studiato molto e fatto molti esami, volevo condividere tutto quello che avevo imparato. Cos\u00ec ho iniziato da solo, ma poi mi ha contattato un editore. Ho scritto 50 libri di ricette e ho venduto un totale di 1 milione di copie&#8221;, sorride Alexander, che ha anche aperto una scuola professionale a Mosca per due anni.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-un-coup-de-coeur-pour-les-lieux\">Un amore a prima vista<\/h2>\n\n<p>Ma il suo obiettivo \u00e8 la Costa Azzurra. Nel cuore di Monte Carlo si \u00e8 liberata una pasticceria. I precedenti proprietari hanno lasciato l&#8217;attivit\u00e0 di famiglia per andare in pensione. Una vera fortuna per i terzi proprietari, che si sono innamorati del locale.<\/p>\n\n<p>&#8220;Mi \u00e8 piaciuto tutto. Le cucine, la sala, la terrazza. Mi sono detto: &#8216;questo \u00e8 il mio sogno'&#8221;. Ma il pasticcere russo ha dovuto conquistare il palato dei monegaschi e adattarsi alle loro tradizioni. &#8220;In Russia non festeggiamo la Pasqua, per esempio, e non abbiamo tronchetti o macaron. Cos\u00ec ho studiato i gusti del posto, prima di aggiungere prodotti pi\u00f9 insoliti alle vetrine&#8221;. Vi state chiedendo qual \u00e8 il dolce preferito del pasticcere? Una delle pi\u00f9 emblematiche \u00e8 quella realizzata per il matrimonio di Louis e Marie Ducruet nel luglio 2019. Vorrei vivere qui per tutta la vita. Monaco mi piace soprattutto per il clima e per la sicurezza. Si pu\u00f2 uscire vestiti bene ed \u00e8 un Paese che incoraggia gli affari&#8221;, racconta lo chef.
