Conosciamo meglio questo artigiano dell&#8217;alta gastronomia.<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">Il riconoscimento \u00e8 arrivato solo nove mesi dopo l&#8217;apertura del ristorante che porta la sua firma: Les Ambassadeurs by Christophe Cussac. Oggi lo chef ha un ristorante a suo nome, coronamento della sua magistrale carriera. Oggi non c&#8217;\u00e8 uno chef che possa eguagliare Jo\u00ebl Robuchon. Ci sono chef molto bravi, certo, ma non hanno il suo background. La ricetta del successo si basa su un semplice credo: \u201cCucinare con il cuore rende tutto pi\u00f9 buono\u201d. Lo chef ama motivare la sua brigata dicendo che i clienti sono come i propri genitori o familiari. Gerard<\/em><\/figcaption><\/figure>\n<\/div>\n<h2 class=\"wp-block-heading\" id=\"h-une-cuisine-inspiree-du-terroir\">Una cucina che si ispira al territorio<\/h2>\n\n<p class=\"wp-block-paragraph\">\u201cLa mia \u00e8 una cucina mediterranea, ma non solo provenzale, mediterranea in tutti i suoi aspetti: Italia, Libano, Algeria&#8230; Cucino quello che mi va di mangiare\u201d, confida con totale sincerit\u00e0.<\/p>\n\n<p class=\"wp-block-paragraph\">Lo chef Cussac incarna valori come la cordialit\u00e0, la semplicit\u00e0 e l&#8217;autenticit\u00e0 che traspaiono nella sua cucina, che combina prodotti semplici sublimati da un tocco di ingredienti nobili.&#13;\n<\/p>\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\">Ho uno stile di cucina che \u00e8 semplice in apparenza. Il prodotto parla da solo; se il prodotto non \u00e8 all&#8217;altezza, la ricetta non verr\u00e0 buona.&#13;\n<\/p>\n<\/blockquote>\n\n<p class=\"wp-block-paragraph\">Un esempio di questo \u00e8 il suo prodotto preferito, la sardina, che ha riscoperto al suo arrivo in Costa Azzurra nel 1997, quando lavorava al ristorante La R\u00e9serve a Beaulieu sur Mer. Christophe Cussac ha fatto suoi i prodotti locali, tanto che la sardina \u00e8 diventata il suo ingrediente preferito. Spiega: \u201cQuando creo i menu, mi ispiro a ricette originali e ai prodotti del territorio. Il prodotto parla da solo; se il prodotto non \u00e8 all&#8217;altezza, la ricetta non verr\u00e0 buona&#8221; spiega lo chef.<\/p>\n\n<p class=\"wp-block-paragraph\">\u00c8 nella sua casa di Contes, nella valle di Paillons, che lo chef Cussac trova la calma e la serenit\u00e0 che comunica attraverso i suoi piatti. Questa tranquillit\u00e0 si riflette anche nell&#8217;atmosfera del suo ristorante. La cucina a vista, vicina ai commensali, invita alla trasparenza e alla prossimit\u00e0. Attenzione per\u00f2: la piccola cucina visibile dal tavolo \u00e8 in realt\u00e0 molto pi\u00f9 grande. Un carrello ricchissimo con numerose variet\u00e0 di pane circola tra i tavoli, sprigionando una sinfonia di sapori. Durante il nostro giro in cucina, dove i commis erano impegnati nella preparazione della cena, ci \u00e8 stato detto che il pane \u00e8 cos\u00ec buono che i clienti lo mangiano senza ritegno anche prima che arrivino in tavola le prime portate.
