Yoric Ti\u00e8che, chef stellato Michelin, e Florent Margaillan,<em>&nbsp;chef p\u00e2tissier,<\/em> si raccontano.<\/strong><\/p>\n\n\n\n<p>Da una parte uno chef stellato, nato ad Aix-en-Provence, che si \u00e8 fatto le ossa al ristorante Clos de la Violette, nella sua citt\u00e0 natale, passando dal Negresco, a Nizza, al Maurice, a Parigi, per poi unirsi alla brigata della cucina del Grand-H\u00f4tel nel 2017.<\/p>\n\n\n\n<p>Dall&#8217;altra lo chef p\u00e2tissier della citt\u00e0 di Brian\u00e7on, vincitore del campionato di Francia di pasticceria nel 2010, che ha lavorato nelle cucine del George V e del Ritz a Parigi, prima di stabilire dimora sul Mediterraneo nel 2018.<\/p>\n\n\n\n<p><strong>&gt;&gt; LEGGI ANCHE: <\/strong><a href=\"https:\/\/www.monaco-tribune.com\/it\/2020\/09\/hotel-storici-della-costa-azzurra-le-negresco-tra-arte-e-storia\/\">Hotel storici della Costa Azzurra: Le Negresco, tra arte e storia<\/a><\/p>\n\n\n\n<p>La loro cucina di oggi \u00e8 stata sicuramente influenzata da alcune esperienze particolari, come spiega Florent Margaillan: &#8220;Il nostro mestiere \u00e8 prima di tutto una passione, un coinvolgimento totale, \u00e8 fatto di incontri, scambi e condivisioni&#8221;.<\/p>\n\n\n\n<p>Lo stesso vale per Yoric Ti\u00e8che: &#8220;Quando sei uno chef o un pasticcere di un certo livello, segui un percorso evolutivo e di ricerca che non ha mai fine. Vado al mercato, vedo cosa c&#8217;\u00e8, come si evolvono i prodotti&#8230; Non si tratta solo di arrivare alle 9:00, mettere il grembiule e poi alle 20:00 smetto di pensare alla cucina. Mi prendo anche del tempo fuori dalla cucina, per poter fare un passo indietro, trovare nuove idee e riflettere su una filosofia lontano dal tran tran quotidiano&#8221;.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-il-lockdown-come-momento-di-riflessione\">Il lockdown come momento di riflessione<\/h2>\n\n\n\n<p>Un momento di introspezione che si \u00e8 reso necessario con la crisi sanitaria. I due chef hanno cos\u00ec potuto riflettere su una nuova boccata d&#8217;aria fresca. Florent Margaillan: &#8220;Non ha cambiato la nostra visione della cucina, ma ci ha dato il tempo di pensare all&#8217;essenziale, ha fatto maturare il nostro pensiero e ha rafforzato il mio desiderio di lavorare localmente, di sostenere i produttori, la stagionalit\u00e0&#8230;&#8221;.&nbsp;<\/p>\n\n\n\n<p>Yoric Ti\u00e8che aggiunge: &#8220;Durante il primo lockdown, a casa, con la mia famiglia, cucinavo con quello che avevo. Quindi, quando abbiamo riaperto a fine giugno, ho continuato a fare lo stesso al ristorante gourmet, adattando i piatti a seconda della disponibilit\u00e0 dell&#8217;orto e delle pescherie&#8221;.<\/p>\n\n\n\n<p>\u00c8 cos\u00ec che, quasi per divertimento, mentre era chiuso in casa, Florent Margaillan ha creato una Tarte Trop\u00e9zienne di sfoglia che \u00e8 poi stata inserita nel men\u00f9 del Grand-H\u00f4tel. &#8220;Ci semplifichiamo la vita, ci liberiamo di alcuni codici, ritorniamo alle origini. Sia Florent Margaillan, che Yoric Ti\u00e8che tengono particolarmente a lavorare con i produttori locali. Il campione di pasticceria di Francia del 2010 non nasconde la sua passione per gli agrumi. Non \u00e8 un caso se il suo tronchetto di Natale, un dolce tipico francese delle feste, \u00e8 a base di limone Meyer, un limone arancione, aromatico e dal gusto particolare. Il rispetto che ha Margaillan per il prodotto, affonda probabilmente le radici nel mestiere dei suoi genitori, arboricoltori e orticoltori nelle Alpi.
